3/4 tbsp. tarragon
1/2 tbsp. chervil
2 shallots, finely chopped
4 crushed peppercorns
1/4 c. tarragon vinegar
1/4 c. drinking white wine
3 egg yolks
1 tbsp. water
1 c. butter

Directions:
Directions:
Combine tarragon, chervil, shallots, vinegar, and wine in double boiler. Low heat until reduced to a thick paste. Cool slightly. Put back over low heat and add egg yolks and water. Stir briskly. Add one cup butter slowly until mix is thick and smooth. Remove from heat and strain through fine sieve. Stir in 3/4 tbsp. tarragon and 1/2 tbsp. chervil. Serve over steaks, potatoes, and vegetables.
