2 lbs. of carrots
1/2 - 1 cup brown sugar
1/4 lb. of butter
1 small pkg of peas or lima beans
salt & pepper to taste

Directions:
Directions:
Cut up carrots into 1-2 inch pieces and boil them in a pot of water until they are tender when you poke them with a fork. Drain the water and put the carrots in a bowl. Mash the carrots with a potato masher and then mix in the butter, brown sugar, salt and pepper. Place the mixture in a greased ring mold and bake for 20 minutes at 375. Flip the ring mold over on a plate or platter. Cook the peas or lima beans as directed and place in the center of the ring.
