Morning Glory Muffins Recipe

Sift in a bowl:
4 c. flour
2 1/2 c. sugar
4 tsp. soda
4 tsp. cinnamon
1 tsp. salt

Stir in:
4 c. grated carrots (1 1/2#)
2 c. raisins (soaked in water)
1 c. shredded coconut
2 apples, peeled, cored, shredded

In a large bowl:
6 large eggs
2 c. vegetable oil
4 tsp. vanilla
Stir this into the flour mixture.

Spoon batter into a well greased muffin tin or muffin cups. Fill to top. Bake at 350 for 20 minutes or a little longer.
