8 tomatoes, ripe
1 box frozen spinach, drained and squeezed dry
1 small onion, diced
cup Parmesan cheese
15-ounces ricotta cheese
Salt
Pepper

Directions:
Directions:
Squeeze the spinach dry. Mix spinach, onion, Parmesan cheese, ricotta cheese, salt and pepper. Cut off top (stem end) of tomatoes. Drain inside, cut loose and reserve for later. Stuff mixture into tomato shells. Add tomato liquid, if needed. Sprinkle with Parmesan cheese. Bake at 350 for 25 minutes.
