1 eggplant

Meal

Pepper

Directions:
Directions:
Slice eggplant. Soak in salt water 20 - 30 minutes to lessen bitterness. Weight down with heavy cup. Mix meal, salt and pepper. Dredge eggplant slices in meal mixture and fry in hot skillet in oil in 1/4 1/2 inch hot oil.

To roast:
Slice and brush with olive oil. Bake at 400 - 450 for 20 - 25 minutes.
