1 small eggplant, unpeeled, -inch slices
1 small jar of your favorite spaghetti sauce
3-ounces mozzarella cheese
1 tablespoon Parmesan cheese

Directions:
Directions:
Bake eggplant slices in a single layer on a non-sticking baking sheet, uncovered, 15 - 20 minutes at 400 until soft or fry eggplant to brown. Place cooked eggplant slices in bottom of a greased casserole dish. Layer sauce and sprinkle with cheeses. Bake at 350 uncovered 30 minutes. May double recipe. Serve with your favorite pasta.
Serves 4.
