4 large baking potatoes
2 tablespoons butter
2 tablespoons flour
1 cup milk
Pinch salt and pepper
1 cup cheddar cheese, grated
1 small onion, chopped

Directions:
Directions:
Boil potatoes until you can pierce with fork, cool and slice thinly. Melt butter in saucepan. Whisk flour into melted butter and cook over medium heat until it thickens. Whisk in the milk and stir constantly until the mixture coats the back of a spoon. Lay potatoes, sauce and cheese ending with grated cheese in a 9X9-inch pan. Bake for approximately 40 minutes in a preheated 375 oven. May double recipe.
