2 cups cooked cauliflower or broccoli (or both, combined)
pound Velveeta cheese
4 tablespoons butter
2 rounds of Ritz crackers, crushed

Directions:
Directions:
Cook vegetables in salted water. Drain. Melt cheese with of butter (2 tablespoons). Mix with vegetables. Place in greased 9X13-inch baking dish. Melt remaining butter and mix with Ritz crackers. Sprinkle Ritz crackers on top of casserole. Bake at 350 for about 20 minutes or until hot and bubbly.
