2 packages frozen broccoli or fresh, cooked
1 can cream of mushroom soup
1 1/2 sticks butter, melted
pound Velveeta cheese
1 cup uncooked rice, cooked in 1 cup salted water
cup onions, chopped, optional
cup celery, chopped, optional

Topping:
stick butter, melted
- 1/2 pound Ritz crackers, crushed

Directions:
Directions:
Cook broccoli; drain. Add butter, cheese, and soup. Mix gently; add cooked rice and stir. Optional: If desired, microwave onions and celery until tender and add to mixture. Stir and pour into buttered casserole dish.
For the topping, mix together melted butter and Ritz crackers. Put on top of casserole. Bake at 350 for 20 - 30 minutes or until hot and bubbly.
