3 pound beef chuck or eye of round roast
1 - 2 tablespoons vegetable oil
Salt
Pepper
Vegetables of your choice – onions, potatoes, green beans, pintos, limas, peas, corn, carrots, okra…
1 or 2 – 15-ounce cans diced tomatoes
3 - 4 bay leaves
Beef bouillon cubes

Directions:
Directions:
Salt and pepper roast. Sauté in oil until brown on both sides. Add 2 cups water on top of browned roast. Bring to a boil. Simmer 2 - 3 hours or until fork tender, use crock pot or pressure cook roast for about 50 minutes on 10 pounds of pressure. Add vegetables of your choice, bay leaves and tomatoes or tomato juice. May need to add beef bouillon cubes and more water.
