1 sticks butter
cups flour
1 cup milk
1 cup heavy cream
6 cups chicken stock
2 cups cooked chicken, chopped or torn into bite-size pieces
1 teaspoon salt
1 teaspoon white pepper
1 teaspoon Dijon mustard
Fresh parsley, chopped for garnish

Directions:
Directions:
Make a roux - melt butter in saucepan, gradually stir in flour and cook for about 2 minutes or until slightly turns brown. Heat milk, cream and stock. Gradually add a little at a time to roux, stirring constantly until mixture is smooth and thickened. When it begins to boil, add chicken and seasonings. Sprinkle with fresh parsley.
