1 onion, diced
1 stalk celery, sliced
1 carrot, sliced
1 quart canned tomatoes
Salt
Pepper
Pinch of sugar, optional
4 - 5 bay leaves
Vegetables 3 to 4 potatoes, corn, limas, peas, okra, green beans, pintos, cabbage or whatever

Directions:
Directions:
Combine onion, celery and onion in a microwave safe container. Add water. Microwave on High for 7 minutes or until tender. Place in large pan. Add potatoes, tomatoes, salt, pepper and bay leaves. Bring to a boil; simmer. Add remaining vegetables. Simmer until tender. May need to add more water or tomato juice if it gets too thick.
