Marinara Sauce:
1 onion, chopped
2 cloves garlic, crushed
1 large can crushed tomatoes
1 can tomato paste
2 cups water
1 teaspoon basil
1 teaspoon oregano
½ teaspoon red pepper
1 whole carrot, chopped very fine or pinch of sugar
Salt
Pepper

Stuffing:
1 pound ground beef, browned
1 package spinach, thawed, drained and pressed to rid of liquid
1 ½ pound ricotta cheese
½ cup Parmesan cheese, grated
2 eggs, beaten
Salt

I package manicotti shells

Directions:
Directions:
Prepare Marinara Sauce. Sauté onion and garlic in olive oil. Add remaining ingredients for sauce and simmer 1 hour.
Cook manicotti shells. Drain and cool. Prepare stuffing mix. Brown ground beef; add spinach, cheeses, eggs, salt and pepper. Stuff shells. Layer shells in dish. Add sauce; repeat until all is used. Bake at 350º for 30-45 minutes or until hot and bubbly.
