2 eggs
¾ cup water
¾ cup flour
¼ teaspoon salt

Filling:
½ pound mozzarella cheese, grated
½ pound ricotta cheese
Salt and pepper
1 egg
12 tablespoons parsley, minced
¼ cup Parmesan cheese, grated
½ cup ham, diced - optional
Marinara Sauce – see Nick’s Marinara Sauce recipe (page 328)

Crepes:
Place ingredients in blender or food processor in order listed. Cover and blend on high speed 20 - 30 seconds. Scrape down sides and blend a few more seconds. Cook crepes in a 6 - 7-inch crepe pan. Melt a pat of butter in crepe pan and add crepe batter.
Makes 8 crepes.
*(For sweet dessert crepes add 2 tablespoons confectioners' sugar and fill with fruit or pudding. Top with syrup or raspberry coulis.)

Filling:
Combine mozzarella, ricotta, salt, pepper and egg. Add ham (optional). Spread filling mixture on crepes. Spread marinara sauce in bottom of dish. Roll and place seam side down in buttered, ovenproof casserole or individual serving dishes. Top with marinara sauce. Cover; bake in 350º oven for 15 minutes or until hot and bubbly. Uncover and bake 10 -1 5 minutes more until done.
