2 pounds fish (tilapia, orange roughy or your choice)
½ cup lime juice
2 - 3 scallions, chopped
1 clove garlic, minced
Salt and pepper
Flour
1 onion, chopped coarse or sliced
1 green pepper, sliced
1 red pepper, sliced
2 cloves garlic
2 large tomatoes or 6 plum tomatoes, peeled and chopped
Salt and pepper

Directions:
Directions:
Thin filets by pounding between plastic wrap or slice horizontally, if needed. Marinate in lime juice, scallions and garlic. Salt and pepper filets. Roll in flour. Brown filets. Place on dish and keep warm. In same skillet the fish was sautéed in, add onions, peppers, garlic and tomatoes, salt and pepper, to taste. Sauté until done with onions and peppers still being crisp. Add fish and serve with rice.
