8 chicken breast halves, skinned and boned
2 cups fine bread crumbs (may use blender)
cup butter, melted
cup oil
6 tablespoons Dijon mustard
6 tablespoons chives, chopped
teaspoon basil or tarragon
Dash black pepper
Dash cayenne pepper

Directions:
Directions:
Process bread crumbs very fine. Remove from bowl and set aside. Mix oil and butter; pour one-half into baking pan. Add mustard, chives, basil and pepper to remaining oil and butter mixture. Salt chicken lightly, brush butter and mustard mixture on all sides of chicken and roll in crumbs. Bake at 400 for 1 hours.
