1-pounds ground round
1 egg
cup onion, finely chopped
teaspoon pepper
1 teaspoon salt
2 tablespoons celery, diced, optional
2 tablespoons green pepper, diced
3/4 cup oatmeal
cup tomato ketchup, tomato juice or 1 can of tomato soup

Directions:
Directions:
Beat egg slightly; add beef, onions, salt, pepper, celery and green pepper. Mix until well blended. Stir in ketchup, then oatmeal. Shape into loaf and put in pan. Bake 350 for 1 hours. If meatloaf starts to get too brown, cover with foil. When done, pour off excess grease. Spread tomato ketchup on top and bake 10 more minutes.
Optional: Make a brown gravy with mushrooms and pour over meatloaf. (Omit tomato catsup).(Makes good sandwiches the next day; slice and heat in skillet or great on grill.)
