1 - 2 pounds hot sausage, browned
onion, chopped
1 30-ounce package frozen hash browns, cooked
1 teaspoons salt, divided
teaspoon pepper
1 cup cheddar cheese, shredded
5 large eggs
2 cups milk

Directions:
Directions:
Brown sausage and onion in large skillet. Drain. Cook hash browns as directed, salt and pepper. Stir together potatoes, sausage and onions, and cheese. Pour into lightly greased 9X13-inch dish. Whisk together eggs, milk and 1 teaspoon salt. Pour over potato mixture. May prepare as needed or the night before. Cover and bake at 350 for 50 minutes. Uncover and bake 10 more minutes or until browned.
Makes 10 servings.
