Crust:
1 cup Graham cracker crumbs (may need more)
1 tablespoons butter, melted

Filling:
2 - 8-ounce cream cheese, softened
cup sugar
3 eggs
1 teaspoons vanilla
- teaspoon almond extract
Dash of salt

Topping:
1 pint (16 ounces) sour cream
1/2 cup sugar
1 teaspoon vanilla

Optional:
1 can cherry pie filling
1/4 cup sugar
1/4 teaspoon almond extract
Red food coloring, if desired

Crust:
Prepare crust with Graham cracker crumbs and butter. Press in buttered 8-inch springform pan, on bottom and up the sides about 1-inch. Place foil around the outside of pan and up the sides at least 1 inch.

Filling:
In a bowl mix the cream cheese, sugar, eggs, vanilla, salt and almond extract. Beating about 20 -30 seconds after the addition of each ingredient. Pour into prepared crust carefully. Place on jellyroll or roasting pan and add warm water one-half way up the sides of the pan. Bake 25-35 minutes at 350. Cool. Cut with dental floss.

Topping:
Mix sour cream, sugar and vanilla. Spread over cheesecake mixture and bake 10 minutes at 350. Chill.

Optional:
Scrape off some of the jelly on the pie filling and discard. Place in sauce pan and add sugar, extract and red food coloring, if desired. Heat until you see a bubble. Cool. Place on top of cheesecake or on each piece when you cut and serve.
