2 cups self-rising meal
1-2 egg whites
1-1 cups buttermilk , add until thin, pancake-like batter

Directions:
Directions:
Preheat skillet with 1 tablespoon solid Crisco in 450 oven. When Crisco is melted and skillet is very hot, pour in batter. Bake 15 minutes or until brown on top.

Hoecakes: Make batter thicker by omitting some buttermilk and fry in hot skillet on top of the stovetop. Flip over and brown on other side. May cover with lid to keep softer crust.
