3 eggs, beat until foamy
2 cups sugar
1 teaspoon vanilla
1 cup oil
2 cups zucchini, (2-3 medium sized zucchini), peeled and grated
1 teaspoon soda
3 cups all-purpose flour
teaspoon baking powder
1 teaspoon salt
3 teaspoons cinnamon
1 cup pecans, chopped

Directions:
Directions:
Mix the eggs, sugar, vanilla and oil. Add the zucchini. Mix the remaining dry ingredients together. Add to wet ingredients. Add the nuts. Bake in 2 well greased loaf pans in a 325 oven for 45 minutes.
