4 c. carrots, sliced, cooked and drained
1/4 c. chopped onions
2 t. horseradish
3/4 c. mayonnaise
1/4 c. grated cheddar cheese
1/4 t. black pepper
14 saltine crackers, crumbled
2 T. Fresh parsley, chopped

Directions:
Directions:
Preheat oven to 400 degrees.
Butter casserole dish. Mix carrots, mayonnaise, horseradish,
onion, and pepper. Heat saltines in 1 T. butter until lightly
browned. Mix cheese and parsley with crackers. Add carrot
mixture to casserole and top with cracker mixture. Bake 20 - 30
minutes - until bubbles.
