1 1/2 lb of lean ground beef
1 small onion, chopped
10 oz frozen spinach, chopped or 1 c chopped fresh spinach
1 1/2 c shredded Mozzerella cheese
1/2 c bread crumbs
1/4 c Parmesean Cheese
1 egg, beaten
1 tsp oregano
1/2 tsp salt
1/4 tsp pepper
1 pkg manicotti noodles
2-3 c spagetti sauce

Directions:
Brown the beef and onion. Don't leave the meat in large chunks. It makes it hard to stuff the noodles. Drain and rinse fat away. Add spinach, 1 c mozzerella(save 1/2 c), bread crumbs, egg, and half of the Parmesean cheese. Add in the seasonings and mix well.
Soften (for about 3 minutes only-don't overcook) the manicotti shells in boiling water being very careful not to break them. They come out of the water easily on the handle of a wooden spoon. Cool and then stuff the meat mixture into them. Place in a baking pan and pour spagetti sauce over them. Sprinkle with the remaining cheeses. Cover tightly and bake at 350 or until noodles are cooked (about 1/2 hour to 45 minutes). Uncover and bake 5 minutes more.
