1 c flour
3/4 c sugar
1 tsp salt
1 tsp baking soda
4 large oranges
Water
2 eggs, beaten
c. vegetable oil
4 c Raisin Bran cereal
1 c. chopped pecans

Directions:
Directions:
In a large mixing bowl, combine flour, sugar, salt and baking soda. Set aside.
Remove peel from 2 of the oranges, cut all oranges in eighths, remove seeds and pith, puree in blender or food processor. Add enough water to oranges to equal 2 cups.
Stir oranges, eggs, oil, cereal and pecans into the dry ingredients. Blend only until mixed.
Grease muffin tins. Bake at 375 for 20 to 25 minutes

When I work in Victoria, I stay in a bed and breakfast. Bill, the innkeeper, is a great cook, and this is his recipe. Makes great mini-muffins too. Muffins can be frozen until ready to eat.
