1/2 c minced onion 3 tbsp oil
1 lb stewing beef 1 1/2 tsp salt
1 tsp paprika 1/2 green pepper,diced
1/4 tsp caraway seed, crushed
1 clove garlic, minced 4 c beef stock
2 small tomatoes or 1 cup of canned
2 medium potatoes

Pinched Noodles
1 c flour 1 egg
1/2 tsp salt 1 tbsp oil

Directions:
Directions:
Saute onion in oil. Add meat and brown. Add spices, then garlic, green pepper, tomatoes and stock. Bring to boil. Cover and cook, simmering 1 hour.

Make the noodles.

Pinched Noodles: Mix flour and salt. Add egg and oil. Stir to form a stiff dough. Sprinkle with a few drops of water if too stiff. Turn out on board and knead until smooth. Let dough rest 30 minutes. Roll out to 1/8 inch thickness. Pinch of pieces slightly smaller than a dime and drop into boiling, salted water. Cook until tender - about 15 minutes. Drain and rinse.

Dice potato and add. Simmer 25 minutes. Stir in pinched noodles.
