2 tbsp margarine
4 c. sliced (and washed) leeks
1 med. onion, finely chopped
3 c. diced potatoes
4 c. chicken stock
1 1/2 c. milk
salt and pepper

Directions:
Directions:
In a 5 qt casserole, melt margarine for 1 minute at 50% power. Add leeks, onions and potatoes. Stir well - coating vegetables with margarine. cover and microwave on high for 15 minutes or til tender. Add chicken stock and stir well. Remove 2 cups of mixture and puree until smooth. Return puree to mixture. Heat on high for 10 minutes or until simmering gently. Add milk and spices. Heat on high 2-3 minute til steamy hot.
Can be done on the stovetop as well. Don't overcook after adding milk.
