3 lbs. sweet potatoes, peeled
1/2 c. packed light brown sugar
1/2 c. butter
2 tbsp. frozen orange juice concentrate
1 tbsp. Amaretto
1 tbsp. Kahlua
1/2 tsp. salt
1/2 tsp. cinnamon
1 tsp. vanilla
2 lightly beaten eggs
1/4 c. toasted pecans
Large marshmallows

Directions:
Directions:
Cube sweet potatoes and cook until tender. Drain. Mash potatoes. Spoon mashed potatoes in mixer bowl and beat until blended. Add brown sugar, butter, OJ, Amaretto, Kahlua, salt, cinnamon and vanilla. Beat until smooth. Add the eggs, beating until blended. Stir in pecans. Spoon mixture into a buttered 2 qt. baking dish. Bake at 350 for 20 min. Top with marshmallows. Bake until marshmallows are golden brown and slightly melted.
