1/2 c. butter 1 tsp. salt 1/8 tsp. paprika 6 salmon steaks, cut in chunks 1 c. crushed Ritz crackers 1 c. crushed potato chips 6 lemon wedges
Melt butter, add salt and paprika. Set aside. Mix cracker and potato chip crumbs together in a bowl. Set aside. Wipe fish with damp paper towel. Dip fish into butter. Then roll in cracker and chip crumbs. Lightly spray broiler pan with cooking oil. Broil for 5 minutes. Turn pieces over and broil second side for 5-8 minutes longer or until fish flakes easily with a fork.
I usually broil it longer than 5 minutes because I like it really crispy.
