3 cups potatoes, cubed
1 cup chopped celery
1/2 cup chopped onion
Large can chicken broth
Pkg frozen cauliflower, broccoli, carrot mixture
Bacon, cooked and crumbled
Pkg tiny ham pieces
2 cans cream of chicken soup
1 lb box Velveeta cheese, cubed
Beer, optional

Directions:
Directions:
In very large saucepan, boil cubed potatoes, celery and onions in chicken broth until tender. At same time, prepare frozen vegetable package in another saucepan. When frozen vegetables are tender, mash a few times with potato masher for bite size pieces. Transfer vegetable mixture into potato mixture. Add cream of chicken soup, stirring well over low heat. Add cubed cheese, a little at a time, stirring well. Once all cheese is melted, add ham, bacon and 1/2 can of beer (optional). Heat through.

Excellent soup! For thicker soup, I add another package of frozen vegetables.
