3 Green Peppers
1 LB Ground Beef
Cup Chopped Onions
4 (8 OZ) Cans Tomato Sauce
1 Cup Cooked Rice
Salt and Pepper to Taste
1 Clove Minced Garlic
1 Tsp. Chili Powder

Directions:
Wash peppers. Cut in half lengthwise. Clean out seeds and membrane. Place in large pan of boiling water. Allow to cook a few minutes. Drain well. Pour part of a can of tomato sauce in 9 x 13 baking dish, being sure the bottom of the pan is coated. Place pepper halves in pan. Brown ground beef, onions, garlic and seasonings. Add 1 can tomato sauce. Combine with cooked rice. Fill pepper halves until full. If you have leftover meat and rice, spoon along sides of peppers. Pour remaining tomato sauce over all. Bake in 350 oven for 30 minutes. Sprinkle with grated cheese if desired. Return to oven until cheese is melted. Enjoy.

This is one of Paul's favorites. The red and yellow sweet peppers are very good fixed this way. Some pre-cooked bacon can be layed on the top of each pepper if desired.
