3 eggs
1 cup oil
2 cups sugar
1 cup flour
1 cup chopped nuts
2 cups raw grated zucchini
3 tsp. cinnamon
1 tsp. baking powder
2 tsp. baking soda
Optional: 1 cup crushed pineapple or raisins

Beat eggs, sugar, oil & zucchini. Add other ingredients. Mix well. Add vanilla and nuts, and any optional ingredients. Bake in greased & floured 9 X 12 pan for 45 to 60 minutes at 350 degrees. Ice if desired, or sprinkle with powdered sugar.

ICING: 1, 8-oz. package cream cheese, 1 stick butter, 1 box of confectioner's sugar, 2 tsp. vanilla. Combine with electric mixer, blend & spread on cooled cake.
