Dressing:
1 tbsp Dijon mustard
5 cloves, chopped
1/4 cup white wine vinegar
3/4 cup olive oil
1/4 cup green onions
salt and ground pepper to taste

Salad:
1/4 cup snow peas, fresh or frozen
1 (small) bunch broccoli florets, cut into small pieces
2 (small) zucchini, cut 1/4" slices
1 (lg) red bell pepper, seeded, cut into strips
1 lb. short pasta (rotelle, fusilli, penne)
1/4 cup Parmesan or Asiago cheese, grated

Dressing" Combine ingredients in a blender until creamy. set aside. Salad: cook snow peas in boiling water for 1 minute. Remove and drench with cold water. Repeat with broccoli and zucchini, cook 3 minutes each. Combine cook veggies in a bowl with read bell pepper. Toss with half of the dressing. Add pasta and toss. Sprinkle with grated cheese. You can add blanched carrots and cold tomatoes, or yellow or orange bell peppers to increase nutrition and give more color.
