2 c Rhubarb, Diced
1/2 c Sugar
1/2 c Shortening
1 1/2 c Sugar
1 Egg
2 c Flour
1 t Soda
1 t Cinnamon
1/4 t Salt
1 c Buttermilk
1 t Vanilla
Topping
1 t Cinnamon
1/2 c Sugar

Directions:
Directions:
Mix rhubarb with cup sugar and let stand until batter is mixed. Cream cup shortening & 1 cups sugar. Beat in egg. Sift flour, soda, cinnamon & salt. Add dry ingredients alternately with buttermilk to creamed mixture. Add vanilla & rhubarb mixture. Mix 1 teaspoon cinnamon & cup sugar together and sprinkle over top of cake before baking.
Bake 350 for 45 - 60 minutes.
