1 1/2 c Oil
2 c Sugar
4 Eggs, beaten
2 c Flour
3 t Cinnamon
2 t Soda
1 t Salt
3 c Carrots, grated

Icing:
6 oz Cream Cheese, softened
1/4 c Butter or Margarine
1 lb Powdered Sugar
1 t Vanilla
1 c Nuts

Directions:
Directions:
Mix oil and sugar and beat well. Add eggs. Sift flour, cinnamon, soda & salt 2 or 3 times. Add to creamed mixture. Add carrots, a small amount at a time. Bake in 3 (8 or 9 inch) pans that have been well greased and floured. Bake at 325 for 30 minutes.

Icing:
Beat all icing ingredients well. Spread on cake.
