2 cups flour
3 teaspoons baking powder
1 teaspoon salt
3/4 cup sugar
2/3 cup vegetable oil
2 large eggs
1 1/3 cup grated carrot
2 teaspoons grated lemon rind
1 cup chopped walnuts
2/3 cup raisins

Directions:
Directions:
Sift together dry ingredients. beat together sugar, oil, and eggs. Beat well. Stir in carrots and lemon rind, then the flour mixture. blend until all is moistened. Set aside 2 tablespoons walnuts. Stir in the raisins and balance of nuts. Turn into a greased 9 X 5 X 2 3/4 loaf pan. Sprinkle the 2 tablespoons nuts on top. Let stand for 10 minutes. Bake at 350 about 1 hour. Test with a toothpick. When done remove from oven. Let stand on a rack for 10 minutes then turn out onto rack.
