2 c Warm Water
1/4 c Oil
1/3 c Honey
2 T Yeast
1/2 T Lecithin, optional
1 T Salt
3 c Whole Wheat Flour
White Flour

Directions:
Directions:
Mix 2 cups whole wheat flour and all ingredients except white flour well. I use an electric mixer. Cover tightly and let set for 20 minutes. Add 1 - 2 cups Whole Wheat flour. Mix with a wooden spoon until stiff enough to turn onto a pastry cloth. Knead, adding flour as needed. I use white flour for kneading. Place in an oiled bowl, cover and let
rise in warm place until double in bulk. (About 2 hours). Punch down and knead 2 minutes: let rise again about 30 minutes in warm place. Punch down and shape into loaves. Place in oiled pans. cover with a tea towel and let rise. bake at 350 50 - 60 minutes.
