4 Hatch green chilies
3 eggs
1 (8 oz) softened cream cheese
1/2 c. flour
1/2 c. cornmeal
1/2 tsp. salt
1/4 tsp. pepper
Cooking oil (1 inch deep in frying pan)

Directions:
Directions:
Wash and de-seed green chilies. Fill chilies with softened cream cheese. Separate the eggs. Beat the egg whites until stiff. Fold in the beaten egg yolks. Combine salt, pepper, flour and cornmeal as the breading for the chilies. Heat oil. Place the stuffed chilies in the egg mixture and then gently roll the chilies in the flour/cornmeal mixture. Fry at medium temperature for about 10 minutes or until golden brown. Drain on plate with paper towels. Serve immediately with salsa.
