1 envelope unflavored gelatin
1/2 c lemon juice
1/4 c water
1 t grated lemon peel
6-8 drops yellow food coloring
8 ounce softened cream cheese
1 c powdered sugar
2 c whipped cream

Directions:
Directions:
In saucepan, combine gelatin, lemon juice, and water. Let stand 1 minute. Stir over medium heat until dissolved. Stir in lemon peel and coloring. Combine cream cheese and powdered sugar. Beat until smooth. Slowly add softened gelatin and blend. Chill until slightly thickened, then fold in whipped cream. Spoon into crust and chill at least 1 hour.
