16 lbs Sweet Potatoes, cooked & peeled (see note for quartering recipe and using 2 large cans of yams instead.)
1/2 c Butter
2 1/2 lb Brown Sugar
1 T Salt
1/2 c Orange Juice

Directions:
Directions:
Slice potatoes lengthwise into 3/4 inch slices. Place in single layer
in baking dish. Melt butter; stir in sugar, salt and orange juice. cook
over low heat, stirring all the time, until sugar dissolves and makes a
syrup. Pour over potatoes. bake uncovered in moderate oven (350) 40 to
50 minutes, spooning syrup over potatoes occasionally. Makes 50 servings.

For a more distinct orange flavor, cook 2 teaspoons grated
orange peel with brown sugar-butter mixture. Variation: Pineapple
Candied Sweet Potatoes: Substitute pineapple juice for the orange
juice. If desired canned yams can be substituted for the sweet
potatoes. (1/4 recipe for 2 large cans of yams.)
