1-15oz. jalapeno blackeye peas, drained
1 1/2 lb. ground beef, drained
1 large onion, chopped
2 cloves garlic, chopped
1-10 can tomatoes with green chilies
1- 10 oz. cream of chicken soup
1-10 oz. mushroom soup
1-10 oz can enchilada sauce
1/2 teaspoon seasoning hot pepper
1 1/2 doz. corn tortillas cut in 1/4 strips
2 cups sharp chedder cheese, grated

Directions:
Directions:
Saute ground beef, onion, garlic until lightly brown. Stir in remaining ingredients except tortilla strips and cheese. Alternate layer the mixture of meat and tortillas beginning and ending with meat in a greased 13x9x2 inch pan. Sprinkle with cheese. Bake at 350 degrees for 35 minutes until bubbly.
Freezes well.
