2 lb Chicken Breast, skinless/boneless, cut into 1"-2" Pieces
1/2 c Flour
1/2 t Salt
1/8 t Pepper
2 Eggs, well beaten

Oil, for frying

1/3 c Soy Sauce
1/3 c Honey
1 T Cooking Sherry
1 t Ginger
1 Garlic, minced

Combine flour, salt and pepper. Dip chicken in eggs, coat with flour mixture. Pour 1/2 inch oil in wide fry pan. Place over medium to medium
high heat. When hot, add chicken. Cook until light golden brown turning as needed (about 3-4 minutes). Meanwhile, heat glaze in small pan.
Lift chicken from oil, drain briefly. Dip in glaze, then place on a rack set in a baking dish. Bake at 250 for 20 minutes, brushing pieces with remaining glaze after the first 10 minutes.
