1/2 c. onion, diced
1/2 c. green pepper, diced
2 - 8 oz. jars taco sauce
2 c. Monterey Jack cheese, shredded
10 - 8 inch flour tortillas
1 med. avocado, peeled & cubed, optional

Directions:
About 20 minutes before serving: in 2 qt. bowl, beat eggs, onion, green pepper with 1 jar taco sauce. Cook on high 6 minutes, stirring after 3 minutes. Add 2/3 c cheese. Cook on high 4-6 minutes, until eggs are only slightly wet, stirring after 2 minutes. On each tortilla, spread 1/3 c egg mixture down center; roll tortilla around filling. Place rolls, seamside down, in 12 x 8 baking dish. Cover with remaining taco sauce and cheese. Cook on high 4-5 minutes until cheese melts, turning dish 1/4 turn after 2 minutes. Top with avocado (optional); serve immediately.
