1 1/2 cups all purpose flour
1 cup white sugar
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
2 eggs
1 tsp vanilla
2/3 cup vegetable oil
1 cup grated carrots
1/2 cup crushed pineapple with juice
1/2 cup raisins

Directions:

Sift dry ingredients into bowl
Beat together eggs, vanilla and oil
Add to flour mixture
Add carrots, pineapple and raisins
Fill muffin cups and bake at 400 degrees for 20 minutes
