1/2 cup chopped onion
1/2 cup chopped green pepper
1 clove garlic minced
1 tbsp cooking oil
1 28 oz can diced tomatoes
3/4 cup long grain rice
1 tsp sugar
1 tsp chili powder
1/8 tsp pepper
1 cup water
Several dashes of hot pepper sauce
1/2 cup shredded cheddar cheese

Directions:
Directions:
In a large skillet cook onions, green pepper and garlic in oil until tender. Stir in undrained tomatoes, rice, sugar, chili powder, pepper, hot pepper sauce and water. Bring to a boil, reduce heat. Cover and simmer for 20-25 min, until rice is tender and most of the liquid is absorbed. Sprinkle with shredded cheese
