Olive oil
1 eggplant, chopped coarsely
2 zucchini, chopped coarsely
1 onion, chopped coarsely
2 heaping tsp chopped garlic
2 red peppers, chopped
1 can ( small) tomato paste

Directions:
Directions:
Saute onion, peppers, and garlic until soft. Add zucchini and eggplant. Cook on low until soft. Add 1 can tomato paste. Simmer for 1 hour.
