1 large egg, beaten
1/2 cup plain flour
1 tsp salt
3 medium green tomatoes, sliced 1/2 inch thick
1/2 cup buttermilk
3/4 cup cornmeal mix
1/2 tsp black pepper
Vegetable oil
Salt to taste

Directions:
Directions:
Pour oil to a depth of about 1/2 inch in a cast iron skillet and heat to about 375 degrees (med. high).
Put plain flour in flat pan or plate. Combine egg and buttermilk and set aside. Combine cornmeal mix, salt and pepper in a shallow dish or pan and set aside.
Cover tomato slices in plain flour then dip them in the egg mixture and finally into the cornmeal mix.
Place tomatoes in hot oil and cook 2 minutes on each side or until golden brown. Drain slices on paper towels. Sprinkle hot slices with salt and pepper to taste.
