3 doz. shrimp, boiled and shelled
1 cup fresh cilantro, tightly packed
1/4 cup grated parmesan cheese
1/2 garlic clove, minced
1/2 cup part-skim ricotta cheese
1 tsp. lemon juice
1/2 jalapeņo pepper, roasted, peeled and seeded

Directions:

Cook shrimp in a large pot of boiling water just until pink. Drain and refrigerate. Process remaining ingredients in a food processor or blender until smooth. Serve with chilled shrimp.
