5 lb. Hamburger 5 tsp. Mortons Tenderquick Salt 2 1/2 tsp. Course Ground Pepper 2 1/2 tsp. Garlic Salt 1 tsp. Hickory Smoke Salt
1st day mix in large bowl, cover and refrigerate. 2nd day mix by hand, cover and refrigerate. 3rd day mix by hand, cover and refrigerate. 4th day mix and form into 5 - 1 pound rolls 2 inches in diameter. Place on broiler pan. Put in 140º oven on bottom rack for 8 hours. Turn every 2 hours. (forms own casing as it cooks).
