3/4 cup finely chopped bell pepper
1/4 cup finely chopped hot pepper
6 cups sugar
1 1/2 cup vinegar
1 6 oz. bottle of pectin

Directions:
Directions:
Cook first four ingredients until mixture comes to a full rolling boil. Cook one minute more stirring to prevent boil over. Remove from heat and add the pectin. Stir well. Let stand about 5 minutes. Pour into sterilized jars, wipe rim, adjust lid and process in boiling water bath for 5 minutes.

This makes a great appetizer served with cream cheese and crackers. You can add green or red food coloring for a faint tint of whichever color pepper you make the jelly with.
