6 cloves garlic
1 tbsp. olive oil
1-1/2 pounds all-purpose potatoes
5 tbsp. butter
1/3 -2/3 c. milk, warmed
1 tsp. salt
1/2 tsp. pepper
1/2 c. grated Parmesan cheese

Directions:
Directions:
Preheat oven to 400. Place garlic cloves on a small square of aluminum foil and drizzle with olive oil. Wrap the foil around garlic and bake in oven for 20 minutes or until golden. Remove and set aside.

Peel and quarter potatoes and cover with water in a large pot. Bring to a boil and simmer until tender, about 15 minutes. Drain the potatoes and return to the pot and mash with masher or mixer. Mash in the roasted garlic. Mix in butter, milk, salt, and pepper. Transfer mashed potatoes to an oven-proof dish and sprinkle top with Parmesan cheese. Bake in oven for 15 minutes or until top is golden.
